1/2 cup chopped green olives
1 small red onion, finely chopped
2 tablespoons olive oil
1 1/2 pounds ground lamb
2 scallions, finely chopped
1 teaspoon curry powder
Salt and pepper, to taste
2 tablespoons olive oil
8 thick slices of a semi-soft
goat cheese
4 brioche buns
Start with the relish: In a medium bowl,
mix together olives, onion and olive oil;
Set aside.
In a medium bowl, combine ground lamb,
scallions, curry powder, salt and pepper.
Mix well and form into 4 patties.
Heat the oil in a large skillet and cook
until browned and just cooked through.
Place two slices of cheese on top of
each burger.
Place the burger on bottom half of the
brioche and add olive relish, cover with
the top and serve.
