Chocolate & Mascarpone Cupcakes
4 oz good quality dark chocolate, chopped
3 cup water 4 tablespoons mascarpone cheese
3 cup vegetable oil
4 cup sugar 2 eggs 1 teaspoon vanilla essence 11⁄
3 cups plain flour 1 teaspoon baking powder chocolate ganache, for serving blueberries, for serving
1. Preheat oven to 375ºF.
2. Place chocolate
and water in a small pot and stir until the
chocolate is disolved.
3. Remove from heat
and add mascarpone. Mix well. 4. In a
bowl, mix oil, sugar, egg, and vanilla. Stir
until sugar has dissolved.
5. Add the
chocolate and mix well.
6. Add flour and
baking powder and mix well. 7. Pour
batter into paper liners.
8. Bake until
the cupcakes are firm to the touch,
about 18 minutes.
