Makes about 80 cookies 1 cup salted butter, softened 1 cup dark brown sugar 1 large egg 1/2 cup molasses 2 teaspoons ground cinnamon 2 teaspoons ground ginger 1/2 teaspoon ground cardamom 1/4 teaspoon ground cloves 4 cups plain flour 1 teaspoon baking powder Add egg and molasses and mix well. Add spices, flour and baking powder and stir until everything is incorporated. Wrap dough in plastic wrap and refrigerate overnight. Preheat oven to 375°F. On a lightly floured surface, roll out the dough to about 1/8 inch thick. Cut out cookies and transfer to a baking tray covered with parchment paper. Bake for about 6 to 8 minutes or until golden.
