MASHED POTATOES WITH CRISPY PARMESAN Love the texture of the creamy potatoes with the crispy Parmesan.
Serves 6
1/4 cup grated Parmesan
2 pounds Yukon Gold
potatoes, peeled and cubed
1 stick butter
1 cup warm milk
Salt and pepper, to taste
Fresh thyme
Preheat oven to 400°F.
In a large pot, cook the potatoes in
unsalted water until tender.
Drain and mash.
Over low heat, add butter and stir until
melted; add milk and stir well.
Season with salt and pepper.
Stir in Parmesan and serve with a sprinkle
of fresh thyme.
