Mormor’s Cod Au Gratin
Serves 4
1 pound cod filets
1 cup cooked regular macaroni
2 tablespoons butter
2 tablespoons plain flour
1 1/ to 2 cups warm milk

1 teaspoon salt

/ teaspoon pepper

3 eggs, separated
1 1/ cups bread crumbs

2 tablespoons butter
Preheat oven to 350°F.
Poach fish in 4 cups simmering
water 3 to 4 minutes.
Drain and flake the fish; set aside.
In a large saucepan, melt butter and
add the flour slowly while stirring.
Add the warm milk, a little at a time,
and stir until smooth (without lumps).
Add salt and pepper.
Beat egg yolks and pour into sauce;
stir gently. (Do not let it cook.)
Beat the egg whites to soft peaks.
Fold them gently into the sauce.
Add the flaked cod and macaroni.
Pour the mixture into a well-greased
baking dish and top with bread
crumbs and butter.
Bake for about 45 minutes or until
golden brown and set.
Serve warm with fingerling potatoes,
melted butter and grated carrots.
