CUDDLED EGGS Can’t be much easier than this—a real, one-pot cooking wonder.
Serves 4
Butter, for coating
4 eggs
8 tablespoons heavy cream
16 baby spinach leaves
4 tablespoons crumbled fried bacon
1 spring onion, thinly sliced
Salt and pepper, to taste
Preheat oven to 350°F.
Butter 4 small ramekins.
Break an egg in each and add cream,
spinach leaves, bacon, onion, salt and
pepper.
Bake for about 10 to 12 minutes.
Serve hot with toast.
