1. Place all the ingredients in a medium
saucepan and bring to a boil.
2. Let
the mixture simmer for 15 minutes.
3. Cool and remove the cinnamon
sticks.
4. Mix with soda water and ice.
Keeps for 1 month, chilled.
Ginger Ale
Makes about 20 glasses
1 cup light brown sugar
1 cub white sugar
2 cups water
4 oz pealed and sliced ginger
2 teaspoons cardamom pods
1 teaspoon whole allspice
1 teaspoon black peppercorns
1. Place all the ingredients in a medium

4. Pour into a fine-mesh sieve
over a large bowl and let drain.
5. Mix
with soda water and ice. Keeps for 1
month, chilled.
