THIS DISH makes me HAPPY because...
it reminds me of the long summer afternoons of my
childhood–running through sprinklers with the
kids in my neighborhood, taking a bite of an orange
creamsicle as the hot sun melted the cool
treat and it dripped down my hands. Summer
seemed to last as long as the school year and
each day was an adventure.
Orange Creamsicle Milkshake
SERVES 4
¾ cup freshly squeezed orange juice
1 teaspoon orange zest
1 tablespoon coconut oil
1 cup light coconut milk
1 ripe frozen banana
1 teaspoon pure vanilla extract
1 teaspoon natural orange extract
1 tablespoon agave
ice cubes

1. Combine orange juice, orange zest, coconut oil, coconut
milk, banana, vanilla extract, orange extract, agave, and ice in a
blender and pulse until smooth. 2. Pour into glasses and serve.
